Anyone out there have any really tasty, high-protein vegan recipes? (I can send you my email address privately if you don’t have a link to the recipe online.)
Remember my friend with the multiple myeloma diagnosis? A bunch of us are feeling a little less useless by bringing meals to the family while she’s undergoing treatment, and she’s been told that a vegan diet would be beneficial - as long as she can get enough protein into her diet.
I’m scheduled to bring food next week, and I haven’t got a hot clue where to start. I don’t want to troll the internet looking for recipes that I hope are tasty - especially if someone out there actually has go-to recipes that you know are delicious.
Ideally, I’m looking for super-high protein recipes that freeze well (or keep for several days) and don’t have any ingredients that I can’t find at my regular grocery or bulk store. Oh, and they can’t be filled with high antioxidant superfoods - she’s trying to keep the chemo toxins in, in a sense, so we don’t want anything overly detoxifying!
Edited to add: I should mention that this family is about as far from vegan as possible under normal circumstances, and I think there’d be a full revolt on my hands if I bring anything that isn’t recognizable to them as food, so perhaps we won’t go whole-hog into tofu and the like - unless I can sneak it in there! (I’m not saying that tofu isn’t food - I just mean that this family has been through enough change recently, and I don’t need to start experimenting with ingredients they’ve never seen before!)
